Discovering the Tukasu Recipe

For this first issue of our Malian gastronomy section, we left our suitcases in the city of 333 saints. The city of Timbuktu is known for its legendary hospitality and in terms of gastronomy, the Tukasu dish is one of the favorites of Timbuktuans. Prepared for the holidays or a dish to welcome guests.

Ingredients for the bread dough for 5 people :

  • 1 kg of flour,
  • 42 g fresh baker’s yeast,
  • 500 ml of water,
  • 1 tsp of salt

Ingredients for the sauce :

  • 1.5 kg of mutton,
  • 10 cl of oil,
  • 250 g of tomato paste,
  • 4 onions,
  • 5 tomatoes,
  • 3 garlic cloves, chopped,
  • 10 fresh dates,
  • 2 bay leaves

Preparation of Tukasu balls :

  • Wash your hands thoroughly!
  • In a small bowl, dissolve the yeast in 300 ml of lukewarm water, stirring to dissolve it well.
  • Mix in 300 g of flour and work to obtain a homogeneous mixture.
  • Horn, cover and let stand warm for 2 hours.
  • Divide the bread dough into balls the size of a tennis ball.
  • Place them in a dish, cover and let rise in a warm place for 1 hour.

Preparation of the sauce :

  • Cut the meat into large pieces.
  • Chop the onions, peel and seed the tomatoes, pit half the dates and mash them.
  • In a casserole dish, heat the oil and color the onions and the meat.
  • Add half the tomatoes and the tomato paste, Cook for 3 minutes.
  • Add the date puree diluted in 1 glass of water.
  • Stir in the spices and simmer 15 minutes over medium heat.
  • Add 2 liters of water, cover and cook for 30 minutes over medium heat.
  • Without completely submerging them, place the bread dough balls in the sauce on the pieces of meat.
  • Close the casserole dish tightly and cook for 30 to 35 minutes.
  • Do not open the casserole dish during cooking.
  • In the event that your casserole dish is not large enough to hold all the balls of bread dough, proceed in several stages and add the same amount of spices and the remains of tomatoes and dates each time. </ li>
  • Remove the dough balls from the sauce and reduce it until it becomes smooth.
  • Serve the Tukasu balls drizzled with the sauce.
